Alfredo Sauce

  • ⅓ cup butter
  • 3 cloves garlic
  • 1 tablespoon all-purpose flour
  • 1 ½ cups milk (2% or whole)
  • 1 cup heavy whipping cream
  • ¾ cup parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ⅛ teaspoon ground nutmeg (optional)

Filling

  • 3 cups cooked shredded chicken
  • 2 cups shredded mozzarella cheese

Garnish

  • 2 tablespoons chopped fresh parsley


Instructions

  1. Cook Noodles: Cook the lasagna noodles according to the package instructions in salted water until al dente. Drain and place them in a pot with room temperature water to prevent sticking.
  2. Preheat Oven and Prepare Pan: Preheat the oven to 375°F (190°C). Lightly spray a 9x13 inch baking dish with cooking spray and set aside.
  3. Make Alfredo Sauce: In a pan over medium heat, melt the butter. Sauté the minced garlic until fragrant, about 1 minute. Stir in the flour and cook for an additional minute to form a roux. Gradually whisk in the milk and heavy cream, allowing the mixture to simmer for 2 minutes. Add parmesan cheese, salt, pepper, and nutmeg if using, whisk until cheese melts and sauce thickens. If the sauce becomes too thick, add a bit more milk to loosen it.
  4. Prepare Baking Dish: Spoon about half a cup of Alfredo sauce onto the bottom of the prepared baking dish and spread it into a thin, even layer.
  5. Assemble Roll Ups: In a large bowl, combine 1 cup of Alfredo sauce with the shredded chicken and 1 cup of shredded mozzarella cheese. Season with salt and pepper to taste. Lay out each noodle on a clean surface, spoon an even layer of the chicken mixture onto each noodle, then sprinkle some mozzarella cheese on top. Roll up each noodle carefully.
  6. Arrange and Bake: Place the assembled roll ups seam side down in the prepared baking dish. Spoon the remaining Alfredo sauce over the top and sprinkle with the remaining mozzarella cheese.
  7. Bake: Bake in the preheated oven for 30 to 35 minutes until the cheese is bubbly and golden brown.
  8. Garnish and Serve: Remove from oven, sprinkle with chopped fresh parsley, and let rest for a few minutes before serving.

  • Use room temperature water to keep noodles from sticking while assembling.
  • If Alfredo sauce becomes too thick, thin it out with a splash of milk.
  • Cooked shredded chicken can be substituted with rotisserie chicken for convenience.
