Ingredients
Scale
Vegetables
- 1 large zucchini, finely diced
- 1 lb cherry tomatoes
- 3 garlic cloves, sliced
Main Ingredients
- 1 lb gnocchi
- 1 round of Boursin cheese
Seasonings and Toppings
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon dried thyme
- A handful of basil, chopped
- 1/2 cup Parmesan, grated
Instructions
- Preheat Oven: Heat your oven to 425°F (220°C) and select a large oven dish or sheet pan around 14 by 9 inches to avoid overcrowding, allowing ingredients to roast properly.
- Prepare Ingredients: Arrange the cherry tomatoes, finely diced zucchini, sliced garlic, and gnocchi evenly in the dish. Sprinkle dried thyme and salt over the top.
- Add Olive Oil and Cheese: Drizzle 2 tablespoons of olive oil over all ingredients, mix gently, then make a small well in the center and nestle the round of Boursin cheese in it.
- Bake: Place the pan in the oven and bake for 30 minutes until the tomatoes are charred and jammy, gnocchi edges are golden, and the Boursin cheese turns deeply golden and melted.
- Create Sauce: Remove from oven and use the back of a fork or spoon to press the molten Boursin cheese and roasted tomatoes down. Stir everything together to coat the gnocchi in a creamy sauce.
- Finish and Serve: Sprinkle chopped basil and grated Parmesan over the top, mix again, divide into plates, and serve hot for maximum flavor and comfort.
Notes
- No need to pre-cook the gnocchi; baking everything together saves time and adds flavor.
- Use a large enough pan to ensure ingredients roast and don’t steam, enhancing texture and taste.
- For more heat, add crushed red pepper flakes before baking.
- Substitute basil with fresh parsley or oregano if desired.
- Leftovers reheat well in a skillet or oven until warmed through and creamy.
