Ingredients
Scale
Potato Mixture:
- 1 tablespoon oil
- 1 1/2 lbs potatoes (any kind), cubed
- 1/2 medium onion, finely diced
- 1/2 green bell pepper, finely diced
Beef Mixture:
- 1 lb lean ground beef
- 2 tablespoons tomato paste
- 2 cloves garlic, minced
- 1 1/2 teaspoons seasoning salt
- 1 teaspoon Italian seasoning
- 1/2 teaspoon ground mustard
- 1/4 teaspoon black pepper
- 1/8 teaspoon red pepper flakes
Sauce and Toppings:
- 3/4 cup low sodium beef or chicken broth
- 1/2 cup tomato sauce
- 1/4 cup cream
- 1 cup shredded mozzarella or cheddar cheese
Garnish:
- Fresh chopped parsley or green onions
Instructions
- Prepare Potato Mixture: Heat 1 tablespoon of oil in a large skillet over medium heat. Add the cubed potatoes and cook, stirring occasionally, until they are golden brown and slightly softened, about 10-15 minutes.
- Cook Vegetables and Beef: Add the finely diced onion and green bell pepper to the skillet with the potatoes. Then add 1 lb lean ground beef, breaking it apart as it cooks. Brown the beef completely, about 5-7 minutes. Stir in 2 tablespoons tomato paste, 2 cloves minced garlic, 1 1/2 teaspoons seasoning salt, 1 teaspoon Italian seasoning, 1/2 teaspoon ground mustard, 1/4 teaspoon black pepper, and 1/8 teaspoon red pepper flakes, cooking for 1-2 minutes to blend flavors.
- Add Sauces: Pour in 3/4 cup low sodium beef or chicken broth, 1/2 cup tomato sauce, and 1/4 cup cream. Stir well to combine. Reduce heat to low and simmer gently until the potatoes are fully tender and the sauce has slightly thickened, approximately 10-15 minutes.
- Melt Cheese and Serve: Sprinkle 1 cup shredded mozzarella or cheddar cheese evenly on top of the mixture. Cover the skillet with a lid and let it sit on low heat for 2-3 minutes until the cheese melts. Remove from heat, garnish with fresh chopped parsley or green onions, and serve hot.
Notes
- Use red-skinned potatoes or Yukon gold for the best texture and flavor.
- For a quicker meal, pre-cook the potatoes by microwaving or boiling before adding to the skillet.
- Feel free to swap the ground beef with ground turkey, chicken, or plant-based meat alternatives.
- Adjust spice levels by varying the amount of red pepper flakes or seasoning salt to taste.
- Add extra vegetables such as mushrooms, zucchini, or carrots to boost nutrition and flavor.
