Chicken Mixture

  • 2 chicken breasts, finely diced

  • 1 (397g) bag coleslaw mix

  • 1 tbsp honey

For the Wonton Shells and Garnish

  • 16 wonton wrappers
  • Cooking spray or olive/canola oil, for brushing
  • Sweet chili sauce, to serve
  • Chopped cilantro, to serve
  • Sesame seeds, to serve


Instructions

  1. Prepare Wonton Shells: Preheat the oven to 375 F. Spray the wonton wrappers lightly with cooking spray or brush them with olive or canola oil. Drape the wrappers over the sides of a 9x13 baking dish. Bake for 7-8 minutes, watching closely to avoid burning. Remove from the oven and gently pull the wrappers apart while they are still pliable to create individual shells. Return to the oven and bake another 7-8 minutes until crispy and golden brown.
  2. Cook Chicken: In a large bowl, combine the diced chicken with hoisin sauce, sesame oil, soy sauce, minced garlic, and fresh ginger. Heat a large skillet over high heat and sauté the chicken mixture for 7-8 minutes, stirring frequently until the chicken is fully cooked and slightly caramelized.
  3. Make Coleslaw: While the chicken cooks, in a separate large bowl, mix together the coleslaw mix, sliced green onions, sesame oil, rice vinegar, soy sauce, and honey until well combined and the slaw is evenly coated.
  4. Assemble Tacos: Spoon the cooked chicken mixture into each crispy wonton shell. Top generously with the prepared coleslaw. Drizzle sweet chili sauce over the top, then garnish with chopped cilantro and a sprinkle of sesame seeds.
  5. Serve: Arrange the assembled wonton tacos on a serving platter and enjoy immediately while the shells are fresh and crispy.
