  • 15-18 extra hazelnuts (for center)


Instructions

  1. Prepare Hazelnut Meal: Process the 1 ½ cups of raw hazelnuts in a food processor until they become a fine meal.
  2. Combine Ingredients: Add orange marmalade, cocoa powder, maple syrup, vanilla extract to the food processor with the hazelnut meal and process to combine evenly.
  3. Add Coconut Sugar: Add the ¼ cup of coconut sugar and process again until the mixture starts to come together and can be rolled into balls. Adjust consistency with cocoa powder or maple syrup/jam if needed.
  4. Prepare Coating and Tray: Spread the chopped hazelnuts or cocoa powder in a bowl for coating. Line a plate or tray with parchment paper and set aside. Have the extra hazelnuts ready for the truffle centers.
  5. Form Truffles: Take 1-2 tablespoons of the mixture and roll it into a ball with your hands. Press one hazelnut in the center, then roll to seal it inside the truffle.
  6. Coat Truffles: Roll the formed truffle in the chopped hazelnuts or cocoa powder to coat it evenly, then place on the lined tray. Repeat with remaining mixture.
  7. Chill and Serve: Refrigerate the truffles for 30 minutes to set. Enjoy immediately or store in an airtight container either at room temperature, refrigerated, or frozen for later use.
