This copycat Olive Garden Chicken & Gnocchi Soup is a creamy and comforting dish made with tender chicken, pillowy gnocchi, and fresh vegetables simmered in a flavorful broth. Ready in just 25 minutes, it's perfect for a cozy meal any day of the week.

Instructions

  1. Sauté Vegetables: Melt 1 tablespoon butter in a large Dutch oven over medium heat. Add the celery, onion, and carrots, and cook, stirring often, until the vegetables are tender and the onions are translucent, about 5 minutes. Add the garlic, and cook, stirring constantly, until fragrant, about 30 seconds.
  2. Create Roux: Add the remaining 3 tablespoons butter, and stir constantly until melted, about 1 minute. Stir in the flour, and cook, stirring constantly, until pale golden brown and bubbly, about 1 minute.
  3. Add Liquids and Chicken: Stir in chicken broth, half-and-half, chopped cooked chicken, sugar, and salt. Bring the soup to a simmer, stirring occasionally.
  4. Cook Gnocchi: Add the gnocchi, and cook, stirring occasionally, until tender, about 3 minutes.
  5. Finish Soup: Stir in spinach, Italian seasoning, black pepper, and nutmeg. Cook for about 2 minutes, stirring often, until the spinach is wilted. Serve warm.

  • You can make this homemade version of Olive Garden's Chicken & Gnocchi Soup in under 30 minutes and for a fraction of the cost.
