Description

This Creamy Cajun Chicken Pasta combines juicy, cajun-seasoned chicken breasts with sautéed bell peppers, onions, and mushrooms in a rich, creamy sauce. Tossed with linguine, it's a flavorful and comforting dish ready in just 30 minutes.

Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breasts
  • 6 teaspoons cajun seasoning, divided
  • 6 tablespoons butter, divided

Pasta and Vegetables

  • 1 pound linguine
  • 3 medium multi-color bell peppers, sliced
  • 1 red onion, sliced
  • 8 ounces white or cremini mushrooms, sliced

Sauce

  • 2 cups heavy cream

Instructions

  1. Season Chicken: Rub each of the 4 boneless skinless chicken breasts with about 1 teaspoon of Cajun seasoning to evenly coat the meat.
  2. Cook Chicken: Heat a large skillet over medium-high heat and add 3 tablespoons of butter. Sear the chicken breasts in the melted butter until browned, about 2 minutes per side. Reduce heat to medium-low and cook the chicken for 5-7 minutes per side until it reaches an internal temperature of 165 degrees Fahrenheit. Remove chicken from skillet and let rest.
  3. Prepare Pasta and Veggies: While the chicken cooks, slice the bell peppers, onion, and mushrooms. Bring a large pot of salted water to a boil, then cook 1 pound linguine according to package directions until al dente. Drain and set aside.
  4. Sauté Vegetables: In the same skillet used for the chicken, melt the remaining 3 tablespoons of butter over medium heat. Add the sliced bell peppers, onion, and mushrooms. Sauté and stir frequently for about 6 to 7 minutes until vegetables are tender. Sprinkle the remaining 2 teaspoons of Cajun seasoning over the veggies and cook for an additional minute.
  5. Make Sauce and Combine: Pour 2 cups of heavy cream into the skillet with the vegetables and bring to a simmer. Stir in the cooked linguine and toss until the pasta is coated evenly and the veggies are well distributed.
  6. Serve: Slice the rested chicken breasts and arrange on top of the creamy Cajun pasta. Serve immediately while hot.
