Sauce

  • 1/2 cup pesto
  • 1 cup heavy cream


Instructions

  1. Prepare the Chicken: Cut the chicken breasts in half lengthwise to create 4 thinner cutlets. Lightly season both sides with salt and pepper, being cautious with salt since pesto can be salty.
  2. Sear the Chicken: Heat olive oil and butter in a skillet over medium-high heat. Once hot, add the chicken cutlets and sear each side for 5 minutes until golden brown. Then transfer the chicken to a plate.
  3. Make the Sauce: Reduce the heat to medium. Add the pesto and heavy cream to the skillet, stirring to combine the ingredients.
  4. Simmer Chicken in Sauce: Return the seared chicken to the skillet along with any juices on the plate. Simmer for 5 minutes until the chicken is cooked through to 165°F and the sauce thickens. Add a splash of water, white wine, or low sodium chicken broth if the sauce reduces too much before the chicken is done.
