Description

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit and pour 1 tablespoon of oil into a sheet tray or baking dish to grease it; set aside.
  2. Prepare avocado slices: If desired, squeeze fresh lime juice over the avocado slices to preserve color. Season with salt and pepper evenly on all sides.
  3. Coat the avocado: Dredge each slice first in flour, then dip into the lightly beaten egg, and finally coat thoroughly with panko breadcrumbs to ensure a crispy crust.
  4. Arrange and oil: Place the coated avocado slices in a single layer on the greased sheet pan. Drizzle the remaining 1 tablespoon of oil evenly over the slices or spray them with cooking spray to aid crisping.
