Scale
Main Ingredients
- 2 large avocados (sliced)
- Juice of 1/2 lime (optional)
- Salt & Pepper to taste
- 1/4 cup flour
- 1 egg (lightly beaten)
- 1 cup panko bread crumbs
- 2 tablespoons oil (divided)
Dipping Sauce
- Chipotle dipping sauce (homemade or store-bought, for serving)
Instructions
- Preheat the oven: Set your oven to 400 degrees Fahrenheit and pour 1 tablespoon of oil into a sheet tray or baking dish to grease it; set aside.
- Prepare avocado slices: If desired, squeeze fresh lime juice over the avocado slices to preserve color. Season with salt and pepper evenly on all sides.
- Coat the avocado: Dredge each slice first in flour, then dip into the lightly beaten egg, and finally coat thoroughly with panko breadcrumbs to ensure a crispy crust.
- Arrange and oil: Place the coated avocado slices in a single layer on the greased sheet pan. Drizzle the remaining 1 tablespoon of oil evenly over the slices or spray them with cooking spray to aid crisping.
- Bake: Bake in the preheated oven for 15 minutes or until golden brown and crispy. For extra crunch, you may drizzle more oil on the fries halfway through baking.
- Serve: Remove from oven and serve immediately with chipotle dipping sauce or your preferred dip like ranch or ketchup.
Notes
- Using lime juice helps prevent the avocado slices from browning during baking but can be omitted if preferred.
- For extra crispiness, spray the avocado fries with cooking spray before baking.
- Use panko bread crumbs over regular bread crumbs for a lighter, crunchier texture.
- This recipe works great as a healthy snack or side dish loaded with heart-healthy fats.
- Serve with ranch, ketchup, or any spicy dip to complement flavors.
