Ingredients
Scale
For the Crust:
- 1 and ½ cups all-purpose flour
- ½ cup brown sugar, packed
- ½ cup unsalted butter, cold and cubed
For the Caramel Pecan Layer:
- 1 cup pecan halves
- ⅔ cup butter
- ½ cup brown sugar, packed
For the Chocolate Topping:
- 1 cup milk chocolate chips
Optional Garnishes:
- Extra chopped pecans
- Sea salt flakes
- Drizzled caramel sauce
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, allowing some paper to hang over the edges for easy removal later.
- Make the Crust: In a medium mixing bowl, combine flour and brown sugar. Using a pastry blender or two knives, cut in the cold, cubed butter until the mixture resembles coarse, sandy crumbs. Work quickly to keep the butter cold.
- Press Crust into Pan: Evenly press the crust mixture into the bottom of the prepared pan using the back of a spoon or your fingers to create a compact, even layer.
- Add Pecans: Sprinkle pecan halves evenly over the crust layer to create the base for the caramel topping.
- Prepare Caramel Mixture: In a small saucepan over medium heat, combine butter and brown sugar. Stir constantly until the mixture begins to bubble and change color.
- Cook Caramel: Once boiling, continue stirring and cooking for exactly one more minute to achieve the perfect caramel consistency without burning.
- Pour Caramel Over Pecans: Carefully pour the hot caramel mixture evenly over the pecans and crust. Use a spatula to spread and ensure full coverage if needed.
- Bake the Bars: Place the pan in the preheated oven and bake for 20 minutes until the topping is bubbly and golden brown.
- Add Chocolate Topping: Immediately after removing the pan from the oven, sprinkle milk chocolate chips evenly over the hot bars. Let them sit for a few minutes to soften.
- Spread Melted Chocolate: Once softened, use an offset spatula or the back of a spoon to spread the melted chocolate into an even layer, allowing residual heat to melt the chocolate smoothly.
Notes
- Use cold butter for the crust to ensure a crumbly texture.
- If you don't have a pastry blender, two knives or food processor pulses can work to cut in the butter.
- For easier removal, make sure your parchment paper hangs over the edges of the pan.
- You can substitute pecans with walnuts if preferred.
- Optional garnishes like sea salt flakes or drizzled caramel sauce add an extra flavor contrast.
- Allow bars to cool completely before cutting for cleaner slices.
