Description

Deliciously crispy garlic parmesan potato wedges baked to golden perfection, seasoned with Italian herbs and served with your favorite dipping sauces for a flavorful snack or side dish.

Ingredients

Scale

Potatoes

  • 1 lb. (3 to 4) russet potatoes (leave skin on)

Seasoning & Coating

  • 2 Tbsp. olive oil
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground paprika

Garnish & Dips

  • Chopped fresh chives (for garnish)
  • Ranch dressing or bleu cheese dressing
  • Sriracha ketchup or regular ketchup

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees F. Line a large baking sheet with parchment paper; set aside.
  2. Prepare Potatoes: Rinse and pat the russet potatoes dry. Cut them into wedges and place in a large bowl.
  3. Coat Potatoes: Drizzle the olive oil over the potato wedges and toss to coat well.
  4. Mix Seasoning: In a small bowl, whisk together grated Parmesan cheese, Italian seasoning, kosher salt, cracked black pepper, garlic powder, and ground paprika.
  5. Season Potatoes: Sprinkle the seasoning mixture over the potato wedges and toss again to ensure even coating.
  6. Bake Wedges: Arrange the potato wedges in a single layer on the prepared baking sheet. Bake for 35 to 40 minutes until the potatoes are tender and golden, turning once halfway through baking for even crispiness.
  7. Garnish and Serve: Remove from oven and sprinkle with freshly chopped chives, if desired. Transfer to a serving platter and serve with ranch dressing, bleu cheese dressing, sriracha ketchup, or regular ketchup.

Notes

  • Use russet potatoes with skin on for extra crispiness and texture.
  • For extra crispy wedges, flip them halfway through baking.
  • Seasoning can be adjusted to taste; add more garlic powder or paprika for a stronger flavor.
  • Gluten-free dipping sauces can be used to keep this recipe gluten-free.
  • Store leftovers in an airtight container and reheat in the oven to retain crispiness.
