- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground paprika
Garnish & Dips
- Chopped fresh chives (for garnish)
- Ranch dressing or bleu cheese dressing
- Sriracha ketchup or regular ketchup
Instructions
- Preheat Oven: Preheat your oven to 425 degrees F. Line a large baking sheet with parchment paper; set aside.
- Prepare Potatoes: Rinse and pat the russet potatoes dry. Cut them into wedges and place in a large bowl.
- Coat Potatoes: Drizzle the olive oil over the potato wedges and toss to coat well.
- Mix Seasoning: In a small bowl, whisk together grated Parmesan cheese, Italian seasoning, kosher salt, cracked black pepper, garlic powder, and ground paprika.
- Season Potatoes: Sprinkle the seasoning mixture over the potato wedges and toss again to ensure even coating.
- Bake Wedges: Arrange the potato wedges in a single layer on the prepared baking sheet. Bake for 35 to 40 minutes until the potatoes are tender and golden, turning once halfway through baking for even crispiness.
- Garnish and Serve: Remove from oven and sprinkle with freshly chopped chives, if desired. Transfer to a serving platter and serve with ranch dressing, bleu cheese dressing, sriracha ketchup, or regular ketchup.
