Season with salt and pepper to taste. Remove the potatoes from the skillet and set aside.
- Cook Steak: Discard any burnt garlic and herbs remaining in the skillet. Increase the heat to high and add the remaining ½ tablespoon of olive oil and 1 tablespoon of butter. Once the butter has melted and is sizzling, add the sirloin steak cubes and sear them for 4-6 minutes until browned on all sides and cooked to your desired level of doneness. Season with salt and pepper during cooking.
- Combine and Finish: Return the cooked potatoes to the skillet with the steak. Stir and cook together for about 1 minute until everything is heated through and flavors are combined. Serve hot immediately for the best taste and texture.
