Description

Instructions

  1. Halve and pit the peaches: Cut along the seam of each peach from stem to end, then twist the halves apart. If the pit remains stuck, use a sharp knife to carefully cut around it and pop it out with a spoon.
  2. Preheat the grill: Heat a grill or grill pan over medium high heat. While heating, lightly brush the top of each peach half with olive oil to prevent sticking and enhance caramelization.
  3. Grill the peaches: Place the peach halves face down on the grill and cook for 5 minutes until grill marks appear and peaches soften slightly. Flip and cook the other side for 4 minutes. Remove from heat when tender but still holding shape.
  4. Plate and serve: Once cool enough to handle but still warm, arrange the peaches on serving plates. Top each half with a scoop of vanilla ice cream and drizzle with caramel sauce. Sprinkle with roasted pistachios, fresh mint, and a pinch of finishing salt for added flavor and texture. Serve immediately.

  • Use freestone peaches for easier pitting, but clingstone peaches work as well.
