Instructions
- Halve and pit the peaches: Cut along the seam of each peach from stem to end, then twist the halves apart. If the pit remains stuck, use a sharp knife to carefully cut around it and pop it out with a spoon.
- Preheat the grill: Heat a grill or grill pan over medium high heat. While heating, lightly brush the top of each peach half with olive oil to prevent sticking and enhance caramelization.
- Grill the peaches: Place the peach halves face down on the grill and cook for 5 minutes until grill marks appear and peaches soften slightly. Flip and cook the other side for 4 minutes. Remove from heat when tender but still holding shape.
- Plate and serve: Once cool enough to handle but still warm, arrange the peaches on serving plates. Top each half with a scoop of vanilla ice cream and drizzle with caramel sauce. Sprinkle with roasted pistachios, fresh mint, and a pinch of finishing salt for added flavor and texture. Serve immediately.

- Use freestone peaches for easier pitting, but clingstone peaches work as well.
