Description

This hearty Hobo Casserole is a comforting one-pan meal that's easy to prepare and packed with flavor. Layers of seasoned ground beef, sliced potatoes, creamy soups, melty Colby Jack cheese, and crunchy fried onions come together for a satisfying dish perfect for family dinners.

Meat and Seasonings

  • 1 pound lean ground beef
  • Salt to taste
  • Pepper to taste
  • ½ teaspoon all purpose seasoning
  • ½ teaspoon Worcestershire sauce

Vegetables and Dairy

  • 4 medium yellow potatoes
  • 8 oz Colby Jack cheese, freshly grated
  • ⅓ cup milk

Condiments and Toppings

  • 10 ounce can cream of chicken soup
  • 10 ounce can cream of celery soup
  • ½ cup French’s fried onions


Instructions

  1. Preheat Oven Preheat your oven to 350°F to prepare for baking the casserole.
  2. Cook Ground Beef Lightly grease a 10-inch cast iron skillet. Add the ground beef and break it up evenly in the skillet. Season with salt and pepper to taste.
  3. Prepare Potatoes Peel and slice the potatoes into even slices. Layer the potato slices evenly on top of the cooked ground beef in the skillet.
  4. Add Cheese Sprinkle the freshly grated Colby Jack cheese evenly over the potato layer.
  5. Mix Soup Mixture In a large mixing bowl, combine cream of chicken soup, cream of celery soup, milk, all-purpose seasoning, and Worcestershire sauce. Whisk until smooth and well blended.
  6. Top Casserole Spoon the soup mixture evenly over the cheese layer. Smooth out with the back of a spoon to cover the surface uniformly.
  7. Bake Covered Cover the skillet tightly with aluminum foil. Place it in the oven on a rack above a baking sheet to catch any drips. Bake for 90 minutes.
  8. Add Fried Onions Remove the casserole from the oven and take off the foil. Sprinkle the French’s fried onions evenly over the top.
  9. Broil for Crispiness Place the casserole under a hot broiler for 2 to 3 minutes until the fried onions turn golden brown and crispy.
  10. Garnish and Serve Garnish with chopped green onions or parsley if desired, then serve warm and enjoy.

  • If you don't have a large cast iron skillet, a 9x13-inch casserole dish works perfectly as a substitute.
