Description

Sheet pan baked honey garlic chicken thighs are juicy and flavorful, featuring a delicious glaze made with honey, garlic, tamari, and spices. Perfectly roasted with minimal effort, this dish is served over prepared rice and garnished with fresh green onions, cilantro, and lime juice for a vibrant weeknight meal or convenient meal prep option.

Ingredients

Scale

Chicken and Marinade

  • 1 ½ pounds chicken thighs
  • ¼ cup avocado oil
  • ¼ cup honey
  • 2 tablespoons tamari
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 ½ teaspoons paprika
  • 1 teaspoon onion powder

To Serve

  • Prepared rice
  • Green onions, sliced
  • Fresh cilantro, chopped
  • Fresh lime juice

Instructions

  1. Prepare the marinade: In a small bowl or measuring cup, combine avocado oil, honey, tamari, minced garlic, apple cider vinegar, paprika, and onion powder. Whisk together until fully blended.
  2. Marinate the chicken: Remove chicken thighs from the refrigerator and place them in a bowl or a Ziploc bag. Pour the marinade over the chicken, seal or cover, and allow the chicken to marinate while it comes to room temperature, about 20 to 30 minutes.
  3. Preheat the oven: During marinating, preheat your oven to 400°F (204°C).
  4. Roast the chicken: Remove the chicken thighs from the marinade, reserving the marinade for later use. Place the chicken thighs on a parchment-lined baking sheet. Roast in the oven for 25 minutes until cooked through and golden.
  5. Simmer the marinade: While the chicken cooks, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer for 5 to 7 minutes until it thickens, stirring frequently to prevent burning or sticking.
  6. Serve: Place the roasted chicken on a bed of prepared rice. Generously baste the chicken with the thickened sauce. Garnish with sliced green onions, chopped cilantro, and a squeeze of fresh lime juice. Enjoy immediately.

Notes

  • Using chicken thighs with skin on yields juicier, more flavorful meat, but skinless can be substituted.
  • For a gluten-free option, tamari is an excellent soy sauce substitute.
  • Marinate chicken for at least 20 minutes to enhance flavor, but do not exceed 2 hours to avoid texture changes.
  • If you prefer a thicker glaze, simmer the marinade a bit longer but watch carefully to prevent burning.
  • Leftover chicken can be stored refrigerated for up to 3 days and reheated gently.
