Instructions

  1. Prepare the carrots: Dice the carrots by first peeling them, then slicing on a diagonal about 1 to 1.5 inches long. For larger, thicker carrots, slice them in half as well to ensure even cooking.
  2. Toss with glaze: In a mixing bowl, combine the sliced carrots with honey, minced garlic, melted butter or ghee, olive oil, cinnamon, ground ginger, salt, and black pepper. Toss everything well to coat the carrots evenly.
  3. Roast the carrots: Spread the coated carrots evenly on a sheet pan. Roast in a preheated oven at 425°F (220°C) for 25 minutes, tossing halfway through to ensure even caramelization. Optionally, broil for an additional 2 to 3 minutes to get nicely caramelized edges.
  4. Serve: Transfer the roasted carrots to a serving dish and garnish with chopped parsley, thyme, or your choice of fresh herbs if desired. Serve warm as a flavorful side dish.
