Description

Jalapeno Peach Chicken is a vibrant dish featuring tender chicken breasts cooked with a sweet and spicy sauce made from fresh jalapenos, juicy peaches, honey, and apple cider vinegar. This delightful fusion of flavors creates a deliciously balanced meal that's both zesty and fruity, perfect for a flavorful dinner.

Ingredients

Scale

Chicken

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Sauce

  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it's ready for baking the chicken.
  2. Season Chicken: Season the chicken breasts evenly on both sides with salt and black pepper to enhance the flavor.
  3. Sear Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear each side for 3-4 minutes until they develop a golden brown crust.
  4. Remove Chicken: Take the chicken out of the skillet and set aside to prepare the sauce.
  5. Cook Jalapenos and Peaches: In the same skillet, add the diced jalapenos and peaches. Cook for 2-3 minutes until they soften slightly, releasing their flavors.
  6. Make Sauce: In a small bowl, whisk together honey, apple cider vinegar, water, and cornstarch until smooth and well combined.
  7. Add Sauce to Skillet: Pour the honey mixture over the jalapenos and peaches in the skillet. Stir well and bring the mixture to a gentle simmer, allowing it to thicken slightly.
  8. Return Chicken: Place the seared chicken breasts back into the skillet, spooning some of the sauce over the top of each piece to coat them well.
  9. Bake: Transfer the skillet to the preheated oven and bake for 25 minutes until the chicken is thoroughly cooked and the sauce is bubbly and caramelized.
  10. Rest and Serve: Remove the skillet from the oven and let the chicken rest for a few minutes. Serve hot with the sauce spooned generously over the chicken for a flavorful finish.

Notes

  • For a milder dish, remove the seeds from the jalapenos before dicing.
  • You can substitute peaches with nectarines or apricots for a different fruity twist.
  • If you don’t have an oven-safe skillet, transfer everything to a baking dish before placing in the oven.
  • Letting the chicken rest after baking helps retain juices, keeping it moist and tender.
  • Serve with rice or steamed vegetables to complement the sweet and spicy sauce.
