Description

Loaded Baked Potato Rounds are crispy, buttery potato slices topped with melted cheddar cheese, crispy bacon, sour cream, and fresh green onions. They make a perfect snack or appetizer for game day or any casual gathering.

Potato Rounds

  • 2 large russet potatoes, sliced into 1/2" rounds
  • 2 tablespoons butter, melted
  • Salt, to taste
  • Pepper, to taste

  • 5 slices bacon
  • 1 cup cheddar cheese, grated
  • 1/2 cup sour cream
  • 3 green onions, green parts sliced


Instructions

  1. Preheat oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the potato rounds.
  2. Prepare potatoes: Scrub the russet potatoes clean and slice each into about 1/2 inch thick rounds. There is no need to peel them.
  3. Arrange and season: Line a rimmed cookie sheet with foil. Brush each potato round on both sides with the melted butter, then season with salt and pepper.
  4. Bake potato rounds: Place the potato rounds on the cookie sheet and bake for 35 minutes, flipping them over halfway through to ensure even cooking. The rounds should be fork tender when done.
  5. Cook bacon: While the potatoes bake, cook the bacon slices in a skillet over medium heat until very crispy. Then cool and crumble the bacon into small pieces.
  6. Add cheese and bacon: When the potato rounds are done, top each round with about 1 tablespoon of grated cheddar cheese and some of the crumbled bacon.
  7. Melt cheese: Return the topped potato rounds to the oven for 2-3 minutes to melt the cheese thoroughly.
  8. Finish and serve: Remove the potato rounds from the oven and add a dollop of sour cream and sprinkle the sliced green onion tops on each. Serve immediately for the best taste and texture.
