Description

A quick and easy festive salad perfect for Christmas, featuring fresh spinach, sweet dried cranberries, crunchy pecans, and a homemade honey poppyseed dressing all combined effortlessly in one bowl.

Ingredients

Scale

Dressing

  • 1/2 cup Olive oil
  • 1/4 cup Apple cider vinegar
  • 3 tbsp Honey
  • 1 tbsp Onion (Finely chopped)
  • 1 tsp Dried mustard powder (Or Dijon mustard)
  • 2 tsp Poppy seeds (Adjust according to your preference)
  • Salt (To taste)
  • Pepper (To taste)

Salad

  • 1 (16 oz) bag Spinach
  • 3/4 cup Pecans (Roughly chopped)
  • 3/4 cup Cranberries (Dried, Sweetened)

Instructions

  1. Prepare the dressing: In a large salad bowl, combine olive oil, apple cider vinegar, honey, finely chopped onion, dried mustard powder, poppy seeds, salt, and pepper.
  2. Whisk ingredients: Whisk the dressing ingredients vigorously for at least 1 minute until they are thoroughly combined and fragrant.
  3. Add spinach: Add the whole bag of spinach to the bowl and toss everything together until the spinach is evenly coated with the dressing.
  4. Add toppings: Sprinkle the roughly chopped pecans and dried cranberries evenly on top of the dressed spinach.
  5. Serve: Serve the salad immediately to enjoy the fresh, crisp texture and flavors.

Notes

  • This salad is best served fresh to maintain the crispness of the spinach and crunch of the pecans.
  • You can substitute dried cranberries with raisins or dried cherries if preferred.
  • Adjust the sweetness of the dressing by adding more honey or vinegar depending on taste.
  • For a vegan option, use maple syrup or agave nectar instead of honey.
  • Make sure to finely chop the onion to avoid overpowering bites.
