Slow Cooker Garlic Butter Steak Bites are tender, flavorful, and cooked low and slow in a rich garlic-butter sauce with sweet onions. Made with sirloin or chuck roast, this comforting crockpot dinner is perfect over mashed potatoes, noodles, or rice.

- 4 pounds Sirloin Steak or Chuck Roast, cut into bite-sized cubes
- 1 ½ teaspoons Kosher Salt, or to taste
- 1 teaspoon Black Pepper
- 1 ½ teaspoons Garlic Powder
- 1 teaspoon Paprika, not the hot one
Sauce and Garnish
- 3 Tablespoons Olive Oil, divided
- 1 large Sweet Onion, thinly sliced
- 1 cup Low Sodium Beef Broth
- 1-ounce packet Au Jus Gravy Mix
- 6 cloves Garlic, pressed
- 5 Tablespoons Unsalted Butter, sliced
- Chopped Fresh Parsley, for garnish
Instructions
- Season the Steak: In a large bowl, combine the bite-sized steak cubes with kosher salt, black pepper, garlic powder, and paprika. Toss until the meat is evenly coated with the seasoning.
- Sear the Steak Bites: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the seasoned steak bites in batches and sear until browned on all sides, about 2-3 minutes per batch. Remove and set aside.
- Sauté the Onions and Garlic: Add the remaining 1 tablespoon of olive oil to the skillet. Sauté the thinly sliced sweet onion until softened and translucent, about 5 minutes. Add the pressed garlic and cook for an additional minute until fragrant.
- Prepare the Slow Cooker: Transfer the sautéed onions and garlic to the slow cooker. Add the seared steak bites on top.
- Add Liquids and Butter: Pour in the low sodium beef broth and sprinkle the packet of au jus gravy mix over the meat and onions. Place the sliced unsalted butter evenly over the top.
- Cook Low and Slow: Cover the slow cooker and cook on low for 7 hours and 20 minutes until the meat is tender and flavors are well combined.
- Garnish and Serve: Stir gently to mix the butter and sauce. Garnish with chopped fresh parsley before serving. Serve hot over mashed potatoes, noodles, or rice.
Notes
- For a richer flavor, you can use chuck roast which has more marbling than sirloin.
- Searing the steak bites before slow cooking helps lock in flavor and adds a nice crust texture.
- Adjust seasoning with salt and pepper to taste after cooking.
