  • 1/4 cup (85g) maple syrup
  • 1/4 cup (45g) melted dairy-free chocolate (or an extra 1/3 cup (35g) cocoa powder)
  • 3 tablespoons (45g) dairy-free milk, room temperature
  • 2 1/2 tablespoons (15g) dutch-process cocoa powder
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon espresso powder (optional)
  • Pinch of salt (optional)

Other

  • ~2 cups dairy-free whipped cream, chilled
  • Chocolate shavings or chocolate chips (optional, for garnish)


Instructions

  1. Prepare the Cherries: In a bowl, combine 2 cups of pitted and halved fresh sweet cherries with 1 tablespoon of maple syrup. Gently mix and let them macerate while you prepare the mousse.
  2. Make the Avocado Chocolate Mousse: In a blender or food processor, add the peeled avocado, maple syrup, melted dairy-free chocolate (or cocoa powder substitute), dairy-free milk, dutch-process cocoa powder, vanilla extract, espresso powder, and a pinch of salt. Blend until the mixture is smooth and creamy.
  3. Assemble the Dessert Cups: In serving cups or bowls, layer a few spoonfuls of avocado chocolate mousse at the bottom. Add a layer of macerated cherries, then a layer of dairy-free whipped cream. Repeat the layering until the cups are filled, ending with whipped cream on top.
  4. Garnish and Serve: Top each cup with the reserved 1/4 cup of fresh sweet cherries and garnish with chocolate shavings or chocolate chips if desired. Serve immediately or chill for 10-15 minutes to allow flavors to meld.
