Instructions
- Prepare White Chocolate Place the finely chopped white chocolate in a medium mixing bowl and set aside.
- Make Ganache In a medium saucepan, combine heavy whipping cream and champagne over low-medium heat, stirring occasionally until smooth. Allow the mixture to come to a simmer and remove from heat immediately.
- Combine Ganache Pour the hot cream and champagne mixture over the chopped white chocolate and stir immediately until the chocolate ganache is smooth and silky.
- Add Butter Add the softened unsalted butter to the ganache, stirring until fully incorporated and melted. Transfer ganache to a separate container and chill in the refrigerator for 45-60 minutes, but not longer than 1 hour.
- Melt Coating Chocolate Near the end of the chilling time, prepare a double boiler by boiling water in a pot. Place white chocolate melting wafers in a heatproof bowl set over the simmering water. Stir occasionally until almost smooth, then add Crisco shortening and continue stirring until fully melted and silky. Remove from heat and set aside.
- Form Truffles Using a 1-inch cookie scoop, portion out the chilled ganache and roll each scoop between your palms to form smooth, round balls. Place them on a baking sheet lined with parchment paper. Repeat until all ganache is used.
- Coat Truffles Dip each chocolate ball into the melted white chocolate coating using dipping tools or two forks, ensuring they are evenly coated on all sides.
- Decorate and Chill Place coated truffles back on the parchment paper and immediately top with decorative sprinkles. Repeat for all truffles.
- Final Chill Return the decorated truffles to the refrigerator and chill for an additional 30 minutes before serving.

- Be careful not to over-chill the ganache; if chilled too long, it will be too firm to scoop and shape easily.
