Description

  • ¼ cup champagne

Coating

  • 1½ cups white chocolate melting wafers
  • 1 tablespoon Crisco shortening
  • Decorative sprinkles


Instructions

  1. Prepare White Chocolate Place the finely chopped white chocolate in a medium mixing bowl and set aside.
  2. Make Ganache In a medium saucepan, combine heavy whipping cream and champagne over low-medium heat, stirring occasionally until smooth. Allow the mixture to come to a simmer and remove from heat immediately.
  3. Combine Ganache Pour the hot cream and champagne mixture over the chopped white chocolate and stir immediately until the chocolate ganache is smooth and silky.
  4. Add Butter Add the softened unsalted butter to the ganache, stirring until fully incorporated and melted. Transfer ganache to a separate container and chill in the refrigerator for 45-60 minutes, but not longer than 1 hour.
  5. Melt Coating Chocolate Near the end of the chilling time, prepare a double boiler by boiling water in a pot. Place white chocolate melting wafers in a heatproof bowl set over the simmering water. Stir occasionally until almost smooth, then add Crisco shortening and continue stirring until fully melted and silky. Remove from heat and set aside.
  6. Form Truffles Using a 1-inch cookie scoop, portion out the chilled ganache and roll each scoop between your palms to form smooth, round balls. Place them on a baking sheet lined with parchment paper. Repeat until all ganache is used.
  7. Coat Truffles Dip each chocolate ball into the melted white chocolate coating using dipping tools or two forks, ensuring they are evenly coated on all sides.
  8. Decorate and Chill Place coated truffles back on the parchment paper and immediately top with decorative sprinkles. Repeat for all truffles.
  9. Final Chill Return the decorated truffles to the refrigerator and chill for an additional 30 minutes before serving.

  • Use high-quality white chocolate for the best flavor and smooth texture.
  • Be careful not to over-chill the ganache; if chilled too long, it will be too firm to scoop and shape easily.
